What is exactly does this consist of? Just making characters, or do we actually sit down and play? And if so is it a beginning to a campaign, one shot, or just jump in with regular players? Been meaning to get in on a game to see how it plays.

Pathfinder Society is the Organized Play for the Pathfinder RPG. Each time they get together they run a scenario from the living campaign that Paizo has put together. You will definitely play if you show up. pre-gens are available or you can make your own 1st level character.

Nuit has stickied a post with links to all the relevant information.

Are you allowed to pick classes from the advanced guide? Such as oracle and witch?

Yes. All that is detailed, as well as the rules for character building and maintenance for the Society, in the Organized Play document.
